Summers are incomplete without Mangoes and their scrumptious recipes. Mango shake, Mango ice-cream, Mango-custard, Mango cake, Aam Pana, Aam ras and the list goes on..
We are on loop with all these dishes and still can’t get enough. How about you?
After baking regular cakes for 2 birthdays, I decided to try another recipe for my in-law’s anniversary. And mango being the talk and taste of the house, gave me an idea to experiment with it.
So, here goes the recipe for Eggless Mango-Custard Cake.
All you need is:
- 2 ripe mangoes
- 2 Cups all-purpose flour (maida)
- 1 Cup custard powder
- 150 gms melted butter
- 2.5 Cups milk
- 2 Tablespoons baking powder
- 1 Teaspoon baking soda
- ½ Teaspoon vanilla extract
- Cake sprinkles for décor (optional)
All you need to do is:
For Cake:
- Preheat the oven at 180 C for 10 min and grease an 8 inch pan.
- Sieve all the dry ingredients into a bowl and mix them.
- Add milk, butter and vanilla extract to the mixture and whisk it well till it becomes smooth
- Pour the cake into the pan and bake it for 40 minutes at 180 C
For Topping:
- Peel a ripe mango and slice it up.
- Put the slices in the blender and add sugar (to taste) and make a puree.
- Once the cake is completely cooled down, spread the puree on it gently.
- Peel another mango and cut it up in thin, long slices to decorate the cake
- Add some sprinkles
Voila! Your mango-custard cake is ready. Savour it while it lasts..
