Since, lockdown started, I had stopped giving my baby formula milk as the cow (I) was always available. But as his formula milk powder was already stocked up, I didn’t want to throw it away (I hate wasting food). It was bothering me for quite some days. When I tasted the formula milk, it tasted same as milk powder. Then it occurred to me that I can use it as a substitute to milk powder.
I rushed to kitchen to carry out my little experiment. I tried with little quantity at first to see how it turns out. As expected, it tasted good, so I fired up the stove to make this dessert for all.
So, here goes the recipe for Home-made Barfi with Milk-Powder/Formula Milk
All you need is:
- 2 Cups Milk Powder / Formula Milk
- ¾ Cup warm milk
- ½ Cup sugar
- ¼ Cup Dry fruits powder (cashew, almonds, pista)
- ¼ Teaspoon Saffron (Kesar)
- 1 Teaspoon of Cardamom powder (Elachi)
- 4 Tablespoons Clarified Butter (Ghee)
All you need to do is:
- Mix Kesar in warm milk and keep it aside for 20 minutes.
- Heat the pan and add kesar milk in it. Add ghee to it and stir well.
- Add milk powder, dry fruits powder, cardamom powder, sugar and mix well
- Stir the mixture on low flame, mash the lumps to make it a smooth mixture
- Keep stirring the mixture until it leaves the pan and holds shape (approx 15 minutes)
- Spread the mixture uniformly in a greased plate or barfi mould
- Gently cut out the shapes in it, usually square or rectangle
- Keep it aside for 30 minutes
Voila! Your dessert is ready. Store it in refrigerator to savour it for couple of days.
